Avocado taken beyond guacamole

Avocados are native to Mexico and Central America and are grown well in Southern California. The fruit looks like a male organ, so for years it was identified as an aphrodisiac and people were embarrassed to be seen eating them. The California avocado board put on a huge avocado campaign. The campaign was centered on the healthy content, and the avocado became a well-loved fruit. The avocado grows on trees and is picked when it is still hard. As a matter of fact, an avocado will not ripen on the tree. This is nice because growers can have a natural storage place for the fruit until needed. The avocado can be ripened quickly if you place it in a brown paper bag. An avocado is ready to use when you can gently squeeze the fruit in the palm of your hand. The feel of the avocado should be firm, but it should yield to gentle pressure. You cannot tell the ripeness of the avocado by color as there are many different shades of green to be found. Now, if you have eaten an avocado, you know about that big seed in the middle. I remember when there was not a house you went into where you would not see an avocado seed with four toothpicks sticking out of its middle sitting in a Mason jar of water in the window. Yes I started many, and one grew beautifully. My daughter Brityn, when she was about 2, was just about as tall as the tree. As we were eating an avocado one day, I explained to her that the plant in the living room came from the seed of the food we were eating. That's all it took! Each day she would make time to talk to the tree, rub its long green leaves and tell it how much she loved it. That tree doubled in size in three months. But moving to Yuma did it no favors: No matter what I did, the tree did not survive. I guess it is time to start another one. Have you ever thought of using the avocado in place of butter? I thought of this idea after making a vegan key lime pie using avocados, agave and limes.
